This embroidery is originally from the city of Assisi in the province of Perugia (Italy). It dates back to the 13th and 14th centuries. Its technique has the particularity that only the background of the drawing is embroidered and the motifs are formed by the non-embroidered base fabric. This embroidery is called reserve.
